Low Carb Breakfast Casserole

  • 1 cup Italian Sausage Cooked
  • 1/2 cup Broccoli Steamed
  • 1/2 cup Tomatoes Chopped
  • 1/2 cup Spinach
  • 1/4 cup Cheddar Cheese Grated
  • 1 cup Whole Milk
  • 8 ea eggs
  • 1/2 tsp salt
  • 1/4 tsp pepper


  1. Layer the sausage, broccoli, spinach and cheese in a large casserole dish. 

  2. In a small bowl, whisk together the milk, eggs, salt and pepper

  3. Pour the milk mixture over the top of the casserole. Press down on the casserole fillings to ensure they are all coated with the milk mixture

  4. Bake the casserole in a 350 degree oven for 20-25 minutes or until the center of the casserole has set and is no longer liquid

  5. Remove from the oven and serve while hot!
